Lavender Crème Brûlée

I wanted to make something nice and a bit challenging so I made myself a lavender creme brulee. The recipe is meant to fill two ramekins but I used a shallow 6in pie dish.
Ingredients
3 egg yolks
1 cup of heavy cream (You can sub half and half)
1 tablespoon of dried lavender ( 2 if fresh)
1/4 cup of white sugar
An extra tablespoon of sugar to garnish
1.) Simmer cream and lavender on the stove for two minutes then let it cool completely( around 20 minutes)
2.) Combine egg yolks and sugar and mix until thick and smooth
3.) Strain the lavender milk into the eggs and whisk together
4.) Put a kettle on to boil
5.) Place your dish or ramekins into a big baking dish
6.) Pour the boiling water into the large baking dish up to halfway up your dish/ ramekins
7.) Cook at 300 degrees for 25-35 minutes until the middle is still jiggly but the sides are set
8.) Cool on the counter then place in the freezer of at least an hour
9.) Crush a pinch of lavender and the extra tablespoon of sugar
10.) Garnish the top of the Creme Brulee with your lavender sugar and place it under the broiler for two minutes on high.
11.) Enjoy!
