Lavender-Lemon Shortbread Cookies

Ingredients
1/2 cup of all-purpose flour
a pinch of salt
1/4 cup of white sugar
1 heaping tsp of dried lavender
1 tsp of grated lemon zest
1/4 cup of butter
optional- 1/4 tsp of vanilla extract
1.) In a mortar combine sugar, lavender and lemon zest and crush until very fine. If you don't have a mortar and pestle i like to use a sturdy bowl and the back of a wooden spoon.
2.) In a bowl combine the flour and salt and your sugar mixture and add vanilla if you want.
3.) Add in your softened butter and mix by hand until it forms a dough texture, then place in the fridge for 30 minutes.
4.) Preheat your oven to 325 degrees
5.) Roll out your dough to be about a quarter of an inch thick and cut with a cookie cutter or glass cup. Mine were about two inches across and yielded nine cookies.
6.) Bake for 12-14 minutes and let cool completely for a crunchy spring snack.
