Mini Pride Pies

If you thought we would make it through June without at least one pride recipe you were sadly mistaken. I know parties and parades aren't really happening right now but this recipe yield more than enough to share. The fruits I used to get my rainbow were

Red- Strawberry

Orange- Apricot

Yellow- Mango, but I think I might have liked yellow peach more

Green- Green Apple

Blue- Blueberry

Purple- Blackberry

I use refrigerated pie dough and cut silver dollar-sized circles with two pie crusts I got around 24 pairs.

  1. Slice the strawberries and cut the mango and apricot into bite-sized 1/2 in pieces. The blue and blackberries can be placed whole.

  2. For sweetness, you can either add a drop on honey onto the fruit or just sprinkle sugar on top before baking.

  3. To assemble place two circles on a lightly floured counter and press down the edges with your thumb keeping the center thicker. place you fruit piece in the center of one of the circles

  4. Then top with the other half and pinch the edged together with a fork.

  5. Bake at 375 for 15-18 minutes or when the edges are golden brown
