Peach and Lemon Balm Hand Pies


My neighbors peach trees have started dropping fruit and they have so kindly given me a few. My lemon balm is also thriving so this is a local match made in heaven.


Ingredients

  • 2 medium peaches

  • 1 tbs of fresh lemon balm(feel free to substitute anything in the mint family)

  • 1/4 cup of white sugar

  • One pie crust(I used frozen but whatever you favorite crust recipe)

1) Cut up the peaches into very small pieces and add to a medium bowl with the cut-up lemon balm. Add the sugar and let sweat on the counter for 30 minutes.

2.) Roll out your pie crust pretty thin (1/8 of an inch) and cut out cour circles. Mine were about 3in across

3) Spoon on a heap of the filing cover and cover with the other circle.

4.) Crimp closed with a fork and close poke two holes using the other side of the fork.

5) Bake at 375 for 18-20 minutes and enjoy!
