S'mores Cookies


I've seen a lot of smores cookies but none like this one! The foundation of the cookie is a thumbprint cookie and there's a genuine toasted marshmallow on top.


Note: These can get very sweet very fast, I used dark chocolate but if you use milk I would cut the sugar down to 1/4 cup.

Ingredients

1/2 cup room temperature butter

1/3 cup brown sugar

1 egg yolk

1/2 tsp vanilla extract

1 tsp of cinnamon

1 cup + 2 Tbs flour

1 tsp cornstarch

pinch of salt

1 bar of dark chocolate

5 marshmallows



Directions

  1. Cream together the sugar and butter on medium-high until smooth.

  2. Add in the egg vanilla and cinnamon and blend

  3. Add the flour cornstarch and salt and mix by hand until fully combined and even in color

  4. Place in the fridge for around an hour

  5. Preheat the oven to 375 degree

  6. Roll the dough into 9 balls and press an indent into each ball with your thumb

  7. Place one square of chocolate in each indent and pinch the dough around the sides chocolate to secure the pieces

  8. Bake for 10-12 minutes until just turning brown on the bottom and remove them from the oven

  9. Cut the marshmallows in half and place them onto the melted chocolate

  10. Turn on your oven light and place the tray under the broiler. Watch the cookies carefully the tops should be toasted in less than two minutes and can burn very quickly. Enjoy!
